A BAR BUILT FOR DISCOVERY

At the heart of Mi Cariño is an agave program built with curiosity, respect for tradition and a deep appreciation for the stories behind what's being produced. What began as a mezcal-focused collection has grown into a living exploration of agave, fermentation, distillation, regional identity and hospitality.

From tequila and mezcal to raicilla, bacanora, sotol and lesser-known regional spirits, you'll find familiar names alongside bottles that rarely reach North Carolina. Whether you come with a plan or a sense of adventure, this collection was built to help you wander, taste and discover without intimidation.

MORE THAN A MEZCAL BAR

A mezcalería is a bar specializing in mezcal and distilled maguey spirits. At Mi Cariño, that idea goes beyond the bottles on the back bar. The program explores how plant, place, producer and process shape what's in the glass, with a collection organized for exploration rather than simply scale.

Some agaves mature in just a handful of years, while others may spend decades in the ground before harvest. Species, growing environment and production traditions can all influence what eventually reaches the glass, creating an extraordinary range of aromas, flavors and textures. There isn't one flavor that defines agave, and that's exactly the point.

THE COLLECTION

Bottles that rarely reach North Carolina. A back bar organized for wandering, not just scale — built one region, one producer, one story at a time.

THE AGAVE

Some agaves mature in a handful of years; others spend decades in the ground. Species, region and tradition all shape what eventually reaches the glass.

THE BACK BAR

The visual anchor of the room — a curated wall of tequila, mezcal, raicilla, bacanora and sotol, organized for wandering.

THE EXPLORATION

There isn't one flavor that defines agave — come with a plan or a sense of adventure and let the bar team guide the way.

PLANT

Species and variety shape everything that follows.

PLACE

Region, soil and climate leave their mark on the glass.

PRODUCER

Tradition, technique and hands passed down.

PROCESS

Cooked, fermented and distilled — every step counts.

KNOWLEDGE BEHIND EVERY POUR

The collection is only part of the program. Mi Cariño continues to invest in formal agave education through the Agave Spirits Institute, so the team can help you better understand what you're drinking and, more importantly, discover what you enjoy.
